Good Day Oat Cookies

These cookies are a super easy wholesome treat, low in fat and naughty sugar, packed with cranberries and raisins for extra nutrients and flavour, they're soft and chewy and a great all-rounder for both adults and children, breakfast or a snack!

Prep Time: 10 minutes

Cook Time: 10 minutes


Ingredients:


1 Cup honey or maple syrup

3/4 Cup dark chocolate chips (cocoa % is up to you) - optional

3 Eggs

3/4 Cup coconut oil or melted unsalted butter

3 Cups instant oats

1 1/2 Cups whole wheat flour or all purpose flour

3 Tsp baking powder

3 Tsp Cinnamon

Pinch of salt

1/4 Cup raisins

1/4 Cup dried cranberries


Instructions:


Set the oven to 190°C / 180° Fan / Gas Mark 5 / 375° F


Line a large baking sheet with parchment paper


In a large bowl mix together all the ingredients until it forms a wet mixture


Drop your desired size cookies onto your baking sheet, and flatten to 3/4" thickness


Bake in the oven for 10 minuets


Once out of the oven, allow to rest on the tray for a further 10 minutes, then share the love!
