Crispy Tofu Nuggets

Make these baked cornflake tofu nuggets when you need a fast and easy snack or vegan dinner solution. Kids, teens, and grown ups will gobble these nuggets up. Serve on their own, with a dip of your choice, noodles, rice, chips, crudités or veggies.

Ingredients:


1 Block tofu (extra firm)

1/2 Cup tamari (gluten free soy sauce)

1 Tsp onion powder

1 Tsp garlic powder

2 Tbsp all-purpose flour or cornstarch (sieved)

1 Tsp sweet smoked paprika

1/2 Tsp turmeric

1 Tsp black sesame seeds

1Tsp white sesame seeds

1 Cup soy milk (unsweetened)

2 Cups cornflakes

Coconut oil spray


Instructions:


Preheat oven to 200C / Gas 6 / 180Fan / 400F


Line a large baking tray with lightly oiled baking parchment.


First press any excess liquid out of the tofu. You can achieve this with a tofu press, or by wrapping the tofu in kitchen paper or a towel, placing something heavy on top and leaving for around 10 minuets.


Once 10 minutes has passed, slice the tofu into around 6 slices, subsequently ripping into cubes to form nuggets.


Add the nuggets into a bowl containing the tamari, onion powder and garlic powder. Allow to marinade for approximately 5 minuets.


In the meantime, prepare the coating in a food processor by combining the paprika, turmeric, sesame seeds and cornflakes. Season with your desired amount of salt and pepper. Pulse until you have a course loose crumb. (Don’t crush too much or they won’t have any texture.)


Tip the crumb mixture onto a plate.


In a separate bowl, whisk the milk and flour together.


Now to crumb the tofu. Take each nugget from the marinade, dip it into the milk and flour, then roll into the crumb mixture, making sure to cover the entire nugget.


Place each nugget onto the baking sheet. Repeating until all nuggets are crumbed.

Lightly spray the nuggets with coconut oil, bake in the oven for 15 minuets. Then flip all the nuggets and bake for a further 10-15 minuets, until crispy and golden.


Note:


You can also shallow fry first in some coconut oil, then move them into the oven to finish off and become extra crispy!


They are best eaten straight from the oven.
