The Perfect Snack BUCKWHEAT GROATS GRANOLA
Buckwheat is a highly nutritious whole grain that many people consider to be a superfood. Among its health benefits, buckwheat may improve heart health, promote weight loss, and help manage diabetes. Buckwheat is a good source of protein, fibre and energy. Even though “groat” may be one of the most unappetising, off putting words that you've heard in a while, there are plenty of simple, easy ways to put these little pellets to good use, one being this super tasty recipe.

Prep Time: 5 minutes
Cook Time: 25 Mins Approximately
Ingredients:
1 ½ cups buckwheat groats
¼ cup pumpkin seeds
¼ cup sunflower seeds
½ cup pecans, chopped
¼ cup shredded coconut
¼ cup coconut sugar
¼ cup maple syrup
2 tbsp coconut oil
1 ½ tbsp peanut butter
1 tsp cinnamon
¼ tsp sea salt
Instructions:
Set the oven to 140° Fan / 320° F
In a pan add the coconut oil, maple syrup, peanut butter and sugar, melt gently
In a bowl add the buckwheat groats, seeds, pecans, coconut and cinnamon, stir well
Add the wet ingredients to the dry and stir really well
Pour mixture onto a lined baking sheet and spread it out
Bake for 25 minutes or until golden
Allow to cool
Notes:
Store in an air tight jar for up to 2 weeks
Enjoy on it’s own with your favourite milk, or as a topping with yoghurt
