Berries are not only incredibly tasty, but are also some of the healthiest fruits you can eat. They are an excellent source of antioxidants known to help prevent cancer and heart disease. So with all of that in mind, try out this super easy to make fruit leather recipe that offers an array of health benefits in the form of a sweet tasty mid-day snack.

Prep Time: 5 minutes

Cook Time: 3 - 4 hours

1 Cup Fresh Raspberries

1.5 Cups Fresh Blueberries

2 Tbsp fresh Lemon Juice

2.5 Tbsp agave or honey

2 Tsp chia seeds

Set the oven to its lowest temperature.

Wash all the fruit, removing any woody bits from the blueberries.

Combine all of the ingredients in a food processor and blend.

Line a baking tray with the mixture, ensuring you get the layer as thin as possible.

Dehydrate in the oven for between 4 - 6 hours or until the centre of the mixture is not tacky

Once cooled, using scissors or a sharp knife, with caution, slice down the sheet in 1 inch wide strips.

Incorporating the parchment roll the slices until they form a pinwheel shape.

Once rolled, simply place in an airtight container so they don't dry out.

You can easily substitute the fruit for almost any other soft alternative, apricot, plum, fig, strawberry, banana, blackberry, peach

If the edges become dry, simply rub with a little water to rehydrate.

You can choose to cut and roll length ways, ( in a pencil style shape,) which will allow you to tie with ribbon or string for an artisan look.
